I’ve recently been experimenting with a Healing Warming Soup that I think you’ll really dig. I was inspired by the idea of Idee Pasto Sano and Healing Food and wanted to create an easy soup that not only tastes great but also helps boost immunity.
In about 20 minutes, I tossed 1 tablespoon of coconut oil into a pot, then tossed in a medium diced onion, 2 cloves minced garlic and a grated inches piece of fresh ginger. I added 1 teaspoon turmeric powder, 1/2 teaspoon ground cumin and a couple of diced carrots along with chopped celery to build depth of flavor.
A handful of sliced shiitake mushrooms joined the mix together with 4 cups vegetable broth and 2 cups water. I finished it off with a cup of chopped kale, salt and pepper to taste, a squeeze of lemon juice, and a pinch of red chili flakes for a little kick.
